Unpasteurized cheese with a range of flavours should not be sliced until purchased otherwise it will start to lose its subtlety and aroma.
Pasteurization is the process of heating food for the purpose of killing harmful bacteria, viruses, etc. and was named after its inventor, Louis Pasteur.
